1 (30 oz) bag frozen hashbrowns, thawed
1 cup sour cream
1 can (10.5 oz) cream of chicken soup
1 cup shredded cheddar cheese
1 cup diced cooked bacon (optional)
1/2 cup chopped green onions (for garnish)
Salt and pepper to taste
1 cup crushed corn flakes or potato chips
1/2 cup melted butter
Instructions
Preheat your oven to 350°F (175°C).
In a large mixing bowl, combine the thawed hashbrowns, sour cream, cream of chicken soup, and shredded cheddar cheese. Mix until well combined.
If using, fold in the diced cooked bacon. Season the mixture with salt and pepper to taste.
Spread the hashbrown mixture evenly into a greased 9x13-inch baking dish.
In a separate bowl, combine the crushed corn flakes (or potato chips) with the melted butter. Mix well.
Sprinkle the buttery corn flakes evenly over the top of the casserole.
Bake in the preheated oven for about 45-50 minutes, or until the top is golden brown and crispy.
Once baked, remove the casserole from the oven and let it cool slightly before serving.
