1 ½ cups all-purpose flour
1 teaspoon baking soda
½ teaspoon baking powder
½ teaspoon salt
3 medium ripe bananas, mashed (about 1 ½ cups)
½ cup granulated sugar
¼ cup brown sugar, packed
¼ cup unsalted butter, melted
2 large eggs
1 teaspoon vanilla extract
½ cup Biscoff spread
Extra Biscoff spread for drizzling (optional)
Chopped walnuts or chocolate chips for added texture (optional)
Instructions
Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
In a medium bowl, whisk together the all-purpose flour, baking soda, baking powder, and salt. Set aside.
In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, melted butter, eggs, and vanilla extract. Mix until well combined.
Gradually add the dry ingredients to the wet banana mixture, stirring gently until just combined.
In a microwave-safe bowl, warm the Biscoff spread for about 10-15 seconds until it’s pourable.
Pour half of the banana bread batter into the prepared loaf pan. Drizzle half of the warm Biscoff spread over the batter and swirl.
Pour the remaining banana bread batter over the Biscoff layer, followed by the rest of the Biscoff spread. Swirl again.
Bake in the preheated oven for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
Once done, remove from the oven and let the bread cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely.
