4 salmon fillets (about 6 oz each, skin-on recommended for moisture and flavor during cooking)

Instructions
In a medium bowl, combine the fresh blackberries, bourbon, soy sauce, honey, Dijon mustard, olive oil, lemon juice, and black pepper. Use a fork or potato masher to gently mash the blackberries into the mixture, releasing their juices while maintaining some texture.
Place the salmon fillets in a shallow dish and season with salt. Pour the bourbon blackberry marinade over the salmon, ensuring each fillet is well-coated. Cover the dish with plastic wrap and refrigerate for at least 30 minutes to 1 hour.
Preheat your grill to medium-high heat (about 400°F/200°C). If using a grill pan, heat it over medium heat on the stovetop.
Remove the salmon from the marinade, allowing excess liquid to drip off. Discard the remaining marinade.
Lightly oil the grill grates or the grill pan with a paper towel dipped in oil. Place the salmon fillets skin-side down on the grill. Cook for approximately 4-5 minutes without moving them.
Using a spatula, carefully flip the salmon over and cook for another 3-4 minutes, or until the salmon reaches an internal temperature of 145°F (63°C) and flakes easily with a fork.
For added flavor, brush some of the reserved marinade (that hasn't touched the salmon) onto the fillets during the last minute of cooking.
