A delightful vegetable dish that showcases the vibrant flavors of fresh bok choy, beautifully enhanced with the rich, umami flavors of caramelized garlic.

1 pound bok choy, trimmed and halved lengthwise
6 cloves garlic, minced
2 tablespoons fresh ginger, minced (optional)
2 tablespoons vegetable oil (or sesame oil)
2 tablespoons soy sauce (can use low-sodium)
1 tablespoon rice vinegar
1 tablespoon maple syrup
Sesame seeds (for garnish)
Chopped green onions (for garnish)
Instructions
Start by washing the bok choy thoroughly under cold running water to remove any grit. Shake off excess water and set aside.
In a large skillet or wok, heat the vegetable oil over medium-high heat for about 1 minute until it shimmers.
Add the minced garlic and sauté for 1-2 minutes until fragrant and lightly golden.
If using, add the minced ginger and cook for an additional 30 seconds.
Place the bok choy cut-side down in the skillet and allow it to caramelize for 3-4 minutes without stirring.
After the cut sides are golden brown, flip the bok choy over gently.
Add the soy sauce, rice vinegar, and maple syrup to the skillet, stirring to coat the bok choy evenly. Cook for another 2-3 minutes until the bok choy is tender yet still crisp.
Remove from heat and taste. Adjust the seasoning with more soy sauce or vinegar if desired.
Transfer to a serving dish and garnish with sesame seeds and chopped green onions before serving.
