1/2 teaspoon baking powder
1/2 teaspoon baking soda

1 cup cottage cheese, drained
1/2 cup honey or maple syrup
1/4 cup coconut oil, melted
1 teaspoon vanilla extract
1/2 cup dark chocolate chips or dried fruit (optional)
1/2 cup chopped nuts (optional)
Instructions
Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine the dry ingredients: rolled oats, whole wheat flour, baking powder, baking soda, salt, and ground cinnamon. Mix well until evenly combined.
In another bowl, whisk together the wet ingredients: cottage cheese, honey (or maple syrup), melted coconut oil, and vanilla extract until smooth and creamy.
Gradually add the wet mixture to the dry ingredients. Stir until just combined. If desired, fold in chocolate chips, dried fruit, or nuts.
Drop tablespoon-sized portions of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly with the back of a spoon.
Bake in the preheated oven for about 12-15 minutes, or until the cookies are golden brown around the edges.
Once baked, remove from the oven and allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
