1 cup strawberries, chopped
8 ounces cream cheese, softened
¼ cup powdered sugar
1 teaspoon vanilla extract (for filling)

Instructions
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease with non-stick spray.
In a medium bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
In a large bowl, whisk together the flour, baking powder, baking soda, salt, and granulated sugar until well combined.
In a separate bowl, whisk the egg, buttermilk, melted butter, and vanilla extract until blended.
