1 pound Italian sausage (mild or hot)
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
1 cup cherry tomatoes, halved
1 cup spinach, fresh
1 teaspoon Italian seasoning
Salt and pepper to taste
1 cup heavy cream
1/2 cup grated Parmesan cheese
1 teaspoon lemon juice
1/4 teaspoon red pepper flakes (optional)
Fresh basil leaves for garnish
Additional grated Parmesan cheese for garnish
Instructions
In a large skillet over medium heat, add the olive oil. When hot, add the Italian sausage. Cook for about 5-7 minutes, breaking it apart with a spatula, until browned and cooked through.
Once the sausage is cooked, add the diced onion and minced garlic to the skillet. Sauté for an additional 3-4 minutes until the onion becomes translucent and the garlic is fragrant.
Stir in the halved cherry tomatoes and cook for another 2-3 minutes until they soften. Then, add the fresh spinach and Italian seasoning. Cook for 1-2 minutes until the spinach wilts. Season with salt and pepper to taste.
Lower the heat, then pour in the heavy cream, stirring to combine. Add the grated Parmesan cheese and stir until melted and the sauce is creamy. Add lemon juice and red pepper flakes if desired.
Allow the skillet to simmer on low for about 3-5 minutes, letting the flavors meld together.
Remove from heat. Garnish with fresh basil leaves and additional grated Parmesan cheese. Serve hot.
