4 boneless, skinless chicken breasts (around 1.5 pounds)
1 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon Italian seasoning
1 cup heavy cream (can substitute with coconut cream)
1/2 cup chicken broth
3-4 cloves garlic, minced
1/2 cup sun-dried tomatoes, chopped
1 cup fresh spinach, roughly chopped
1/2 cup grated Parmesan cheese (optional)
1 tablespoon olive oil
1/2 teaspoon red pepper flakes (optional)
Fresh basil or parsley, chopped (for garnish)
Extra grated Parmesan cheese (for garnish)
Instructions
Season the chicken breasts with salt, pepper, and Italian seasoning on all sides.
In a skillet over medium heat, add olive oil and sear the chicken for 2–3 minutes on each side until golden brown.
Place the chicken breasts in the bottom of your CrockPot, ensuring they are arranged in a single layer.
In a bowl, whisk together heavy cream, chicken broth, minced garlic, and red pepper flakes if using. Pour the mixture over the chicken.
Sprinkle the chopped sun-dried tomatoes and spinach over the top of the chicken and sauce mixture.
Cover and cook on low for 5–6 hours or on high for 3–4 hours until the chicken is tender.
In the last 30 minutes of cooking, stir in the grated Parmesan cheese.
Once cooked, shred the chicken in the sauce using two forks or leave it whole for serving.
