Ingredients
Scale:
4 cups fresh spinach, washed and chopped
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
4 large eggs
1/4 cup milk (or non-dairy milk for a lactose-free option)
1/4 teaspoon nutmeg
Salt and pepper to taste
1 tablespoon olive oil
1/2 onion, finely chopped (optional)
2 cloves garlic, minced (optional)
Fresh herbs (such as parsley or chives), finely chopped (for serving)
Cherry tomatoes, halved (for garnish)
Instructions
Preheat the oven: Set your oven to 375°F (190°C) to ensure it’s hot when you’re ready to bake.
Sauté the spinach: In a large skillet, heat the olive oil over medium heat. Add the chopped onion (if using) and garlic; sauté until softened, about 3-4 minutes. Then, add the spinach and cook until wilted, about 2-3 minutes. Remove from heat and let cool slightly.
Prepare the filling: In a large mixing bowl, combine the ricotta cheese, mozzarella cheese, and Parmesan cheese. Stir well until smooth and creamy. Add the eggs, milk, nutmeg, salt, and pepper. Whisk together until fully combined.
Combine spinach with cheese mixture: Once the spinach has cooled, stir it into the cheese mixture until evenly distributed.
Transfer to a baking dish: Grease a pie dish or a square baking pan with olive oil. Pour the spinach and cheese filling into the dish, spreading it evenly.
Bake: Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and the center is set.
Cool and serve: Allow the pie to cool for about 10 minutes before slicing.
