A simple yet delicious meal idea that blends Mediterranean flavors into a flatbread pizza, perfect for a quick weeknight dinner or a crowd-pleasing appetizer.
Ingredients
Scale:
2 large flatbreads (store-bought or homemade)
2 cups fresh basil leaves
1/2 cup pine nuts (or walnuts)
1/2 cup grated Parmesan cheese
2 cloves garlic, minced
1/2 cup extra-virgin olive oil
Salt and pepper to taste
1 cup fresh mozzarella cheese, sliced
1/2 cup cherry tomatoes, halved
1/4 cup black olives, sliced (optional)
Fresh basil leaves for garnish
Red pepper flakes (optional)
Instructions
Prepare the Homemade Pesto Sauce: In a food processor, combine the fresh basil leaves, pine nuts, Parmesan cheese, and minced garlic. Pulse until everything is finely chopped.
Add the olive oil gradually while the food processor is running. Continue blending until the mixture is smooth and creamy. Season with salt and pepper to taste.
Preheat your oven to 400°F (200°C).
Assemble the Pizza: Place the flatbreads on a baking sheet lined with parchment paper. Spread an even layer of the homemade pesto sauce over each flatbread.
Layer the sliced mozzarella evenly over the pesto. Distribute the cherry tomato halves and olives (if using) across the pizzas.
Bake the Flatbreads: Place the baking sheet in the preheated oven and bake for 12-15 minutes, or until the cheese is melted and bubbly.
Garnish and Serve: Once baked, sprinkle fresh basil leaves on top and add red pepper flakes if desired. Slice into pieces and serve warm.
