  1. If not using rotisserie chicken, cook and shred 2 cups of chicken breast or thighs. Season with taco seasoning for added flavor.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  3. Place one tortilla in the skillet. On half of the tortilla, layer ½ cup of shredded chicken and ¼ cup of cheese. Fold the other half of the tortilla over the filling.
  4. Cook the quesadilla for about 3-4 minutes on one side, until golden brown and the cheese starts to melt. Flip and cook for another 3-4 minutes on the other side.
  5. Transfer the quesadilla to a cutting board and cover with foil to keep warm while you repeat the steps for the remaining tortillas.
  6. Slice the quesadillas into wedges and serve hot with your choice of toppings.
