2 cups of cubed watermelon
2 cups of cubed cantaloupe
2 cups of cubed honeydew melon
2 cups of fresh pineapple, cut into bite-sized pieces
Juice of 2 limes (about ¼ cup)
2 tablespoons of honey (or agave syrup)
¼ teaspoon of sea salt
¼ cup of fresh mint leaves, chopped
Instructions
Start by thoroughly washing all the fruits under cold running water. Cut the watermelon, cantaloupe, and honeydew melons into bite-sized cubes, ensuring each piece is roughly uniform in size for even mixing. Pineapple should also be cut into similar-sized pieces for uniformity.
In a small bowl, whisk together the lime juice, honey, and sea salt until well combined. Adjust the seasoning to taste.
In a large mixing bowl, gently toss the cubed watermelon, cantaloupe, honeydew, and pineapple. Use a spatula to lift and fold the fruits rather than stirring vigorously.
Drizzle the prepared lime dressing over the mixed fruits. Use a spatula or large spoon to gently fold the dressing into the fruit salad.
Fold in the chopped mint leaves for a refreshing herbal note.
