4 cups seedless watermelon, cubed
2 cups strawberries, hulled and halved
1 cup blueberries, rinsed and dried
1 cup pineapple, diced (fresh or canned)
1/4 cup fresh mint leaves, chopped
1/2 cup crumbled feta cheese (optional)
2 tablespoons honey or agave syrup
2 tablespoons fresh lime juice
1 tablespoon olive oil
Salt and pepper to taste
Instructions
Start by washing all fruits thoroughly. Cube the watermelon into bite-sized pieces, hull and halve the strawberries, rinse the blueberries, and dice the pineapple.
In a small bowl, whisk together honey (or agave), fresh lime juice, and olive oil. Season with salt and pepper to taste.
In a large mixing bowl, add the cubed watermelon, strawberries, blueberries, and pineapple. Pour the dressing over the fruit mixture and gently fold to combine.
Add the chopped mint leaves and crumbled feta (if using) to the bowl, and give it another gentle toss.
Allow the salad to chill in the refrigerator for about 30 minutes before serving.
