1/4 cup granulated sugar
1 cup water
1 tablespoon cornstarch (for dusting)
1 cup fresh strawberries, hulled and halved
1/4 cup sweetened condensed milk (optional)
Instructions
Prepare the strawberries: Rinse the strawberries under cold water, then hull them and cut them in half. If desired, drizzle with sweetened condensed milk for added sweetness. Set aside.
Mix the mochi dough: In a microwave-safe bowl, combine the sweet rice flour and granulated sugar. Gradually add the water, stirring until the mixture is smooth and lump-free.
Cook the mochi: Cover the bowl with plastic wrap, leaving a small gap for steam to escape. Microwave on high for 1 minute, then stir. Microwave for another minute, and stir again. Finally, microwave for an additional 30 seconds until the dough is translucent and sticky.
Cool the dough: Allow the mochi dough to cool slightly until it’s comfortable to handle but still warm. This usually takes about 5-10 minutes.
Shape the mochi: Dust your work surface with cornstarch to prevent sticking. Take a small piece of mochi dough (about the size of a golf ball) and flatten it into a round disc. Place a strawberry half in the center and wrap the mochi around it, pinching to seal.
Final dusting: Once all the mochi pieces are shaped, dust them lightly with cornstarch to prevent sticking.
