Ingredients
Scale:
2 cups gluten-free all-purpose flour
1/4 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 tablespoon ground cinnamon
1/2 cup unsalted butter, melted
1/2 cup milk
2 large eggs
1/4 cup granulated sugar (for topping)
1 tablespoon ground cinnamon (for topping)
Instructions
Preheat your oven to 375°F (190°C). Grease a standard muffin tin with cooking spray or line it with parchment paper.
In a large mixing bowl, whisk together the gluten-free flour, sugar, baking powder, salt, and cinnamon until well combined.
In a separate bowl, whisk together the melted butter, milk, and eggs until smooth.
Pour the wet ingredients into the dry ingredients. Stir gently until just combined.
On a lightly floured surface, turn out the dough and shape it into a rectangle (about 12x8 inches).
Use a rolling pin to flatten the dough to about 1/4 inch thick. Spread melted butter over the surface.
In a small bowl, mix the 1/4 cup sugar with the 1 tablespoon of cinnamon. Sprinkle this mixture evenly over the buttered dough.
Starting from one long side, roll the dough tightly into a log. Cut the log into 12 equal pieces.
Place each piece into the muffin tin, cut side up.
Bake in the preheated oven for 20-25 minutes, or until the tops are golden brown.
Allow the cruffins to cool in the pan for 5 minutes before transferring them to a wire rack.
