A delicious grilled sausage meal with roasted potatoes and fresh vegetables, perfect for outdoor cooking and family gatherings.
Ingredients

1 pound of your favorite grilled sausage (Italian, bratwurst, or chicken sausage)
1 tablespoon of olive oil, plus more for drizzling
1 teaspoon of garlic powder
1 teaspoon of paprika
Salt and pepper to taste
1.5 pounds of baby potatoes, halved or quartered
1 red bell pepper, chopped
1 green bell pepper, chopped
1 medium red onion, sliced thinly
2 tablespoons of fresh herbs (such as rosemary or thyme), finely chopped
1 tablespoon of balsamic vinegar (optional)
Instructions
Preheat the grill to medium-high heat, around 400°F (200°C).
In a large bowl, combine halved baby potatoes, chopped bell peppers, and sliced onions. Drizzle with olive oil and sprinkle with garlic powder, paprika, salt, pepper, and fresh herbs. Toss until coated.
Spread the seasoned potato mixture onto a large sheet pan or grilling tray in a single layer.
Nestle the sausages among the potatoes and vegetables. Drizzle balsamic vinegar over the top if desired.
Place the tray on the grill and close the lid. Grill for about 25-30 minutes, turning sausages halfway through until browned and potatoes are fork-tender.
Remove from the grill and let sit for a few minutes before serving warm with additional fresh herbs if desired.
