Hearty Hobo Casserole Ground Beef with Cheesy Potatoes

1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 can (15 oz) diced tomatoes, undrained, with Italian herbs
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it apart with a spatula, about 5-7 minutes.
Add the diced onion and minced garlic to the skillet. Sauté until the onion is translucent, approximately 3-4 minutes.
Stir in the diced tomatoes, frozen mixed vegetables, cream of mushroom soup, Worcestershire sauce, salt, and pepper. Allow the mixture to simmer for about 5 minutes.
In a greased 9x13 inch baking dish, layer half of the sliced potatoes on the bottom. Pour half of the beef mixture over the potatoes and sprinkle with 1 cup of shredded cheddar cheese.
Repeat the layering process with the remaining potatoes, beef mixture, and finish with the remaining cheese on top.
In a small bowl, combine the milk with the melted butter and pour it evenly over the casserole.
In another bowl, mix the crushed cornflakes or breadcrumbs with another tablespoon of melted butter. Sprinkle this mixture evenly over the top of the casserole.
Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes. Remove the foil and bake for an additional 15-20 minutes.
Allow the casserole to cool for about 5-10 minutes before serving.
