Homemade Zucchini Roll-Ups are a delightful way to enjoy summer vegetables, combining fresh zucchini with a creamy filling that packs a flavorful punch. Perfect as a healthy appetizer or a light lunch, these savory roll-ups highlight Mediterranean flavors and can be a centerpiece for any gathering.

2 medium zucchinis, preferably firm and fresh
1 tablespoon olive oil, use extra virgin
Salt and pepper to taste
8 oz cream cheese, softened
1/4 cup grated Parmesan cheese
1/4 teaspoon garlic powder
1/4 teaspoon Italian seasoning
1/2 cup fresh spinach, chopped
1/4 cup sun-dried tomatoes, chopped
1 tablespoon fresh basil, chopped
Instructions
Wash the zucchinis thoroughly under cool running water. Using a vegetable peeler or mandoline, slice the zucchinis lengthwise into thin strips, about 1/8 inch thick.
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Place the zucchini slices on the prepared baking sheet in a single layer. Brush both sides lightly with olive oil and sprinkle with salt and pepper. Bake for 10-12 minutes until slightly tender.
In a mixing bowl, combine the softened cream cheese, grated Parmesan, garlic powder, Italian seasoning, chopped spinach, sun-dried tomatoes, and fresh basil. Mix until everything is well incorporated.
Once the zucchini strips are done baking, remove them from the oven. Take a zucchini strip, place about 1 tablespoon of the cream cheese filling at one end, and carefully roll it up.
Arrange the zucchini roll-ups seam-side down on the baking sheet. Drizzle with olive oil and sprinkle with additional Parmesan cheese if desired. Return to the oven and bake for an additional 10-15 minutes.
Let the roll-ups cool slightly before serving. They can be enjoyed warm or at room temperature.
