  1. Begin by seasoning the chicken. In a bowl, mix together the taco seasoning, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper. Ensure that you rub this mixture all over the chicken thoroughly.
  2. Set your Instant Pot to the 'Sauté' function. Once hot, add the olive oil and allow it to heat up for about 1 minute until shimmering.
  3. Carefully add the seasoned chicken to the pot. Sauté for about 3-4 minutes until the chicken is browned on the outside.
  4. Pour in the chicken broth, ensuring to scrape the bottom of the pot to release any browned bits.
  5. Close the lid of the Instant Pot, making sure the valve is set to 'Sealing.' Select the 'Pressure Cook' setting and set the timer for 10 minutes for chicken breasts or 12 minutes for thighs.
