For the Kiwi Layer:
2 ripe kiwis, peeled and sliced
1 tablespoon honey or agave syrup (optional)
1 tablespoon fresh lime juice
For the Watermelon Layer:
2 cups seedless watermelon, cubed
1 tablespoon honey or agave syrup (optional)
1 tablespoon fresh lime juice
Instructions
In a blender, combine the sliced kiwis, honey (if using), and lime juice. Blend until smooth and creamy, about 30 seconds.
Pour the kiwi mixture into popsicle molds, filling each cavity about one-third full. Tap the molds gently on the counter to remove any air bubbles.
Insert the popsicle sticks and freeze the molds for at least 2 hours or until the kiwi layer is completely firm.
Rinse the blender, then add the cubed watermelon, honey (if using), and lime juice. Blend until completely smooth, about 30 seconds.
Remove the popsicle molds from the freezer. Carefully pour the watermelon mixture over the frozen kiwi layer, filling each mold to the top.
Place the molds back in the freezer and freeze for an additional 4 hours, or until solid.
To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the popsicles.
