Lazy Lasagna Tortellini is the ultimate 30-minute meal that combines the classic flavors of lasagna with the convenience of tortellini. This recipe is perfect for busy weeknights when you want a delicious, creamy dish that the whole family will love.

12 ounces of cheese tortellini (fresh or frozen)
1 tablespoon olive oil
1 medium onion, diced
3 cloves garlic, minced
1 can (28 ounces) crushed tomatoes
1 teaspoon dried Italian herbs (basil, oregano, thyme)
Salt and pepper, to taste
1 cup ricotta cheese
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1 large egg
1 cup shredded mozzarella cheese (for topping)
Fresh basil leaves, for garnish (optional)
Instructions
In a large pot of boiling salted water, cook the tortellini according to package instructions (usually about 3-4 minutes for fresh, 6-8 minutes for frozen). Drain and set aside.
In the same pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until softened. Stir in the garlic and cook for another minute until fragrant.
Pour in the crushed tomatoes and sprinkle in the dried Italian herbs. Season with salt and pepper. Stir to combine and let the sauce simmer for about 5-7 minutes.
In a medium bowl, combine the ricotta cheese, shredded mozzarella, grated Parmesan, and egg. Season with salt and pepper, then mix until smooth and creamy.
Reduce the heat to low, and add the drained tortellini into the sauce, gently folding to coat the pasta completely.
Preheat your oven to 375°F (190°C). In a baking dish, layer half of the tortellini mixture. Spoon half of the cheese mixture over the tortellini. Repeat with the remaining tortellini and cheese mixture.
Sprinkle the top with the remaining shredded mozzarella cheese.
Place the baking dish in the preheated oven and bake for 20-25 minutes or until the cheese is bubbly and golden brown.
Once done, remove from the oven and let it cool for a few minutes. Sprinkle with fresh basil leaves before serving.
