A deliciously refreshing and protein-packed snack combining the bright flavors of lemon with the natural sweetness of blueberries, offering the nutritional benefits of cottage cheese.
Ingredients
Scale:
1 cup rolled oats
½ cup vanilla protein powder
¼ cup almond flour
¼ cup shredded coconut (unsweetened)
1 tablespoon chia seeds
1 cup cottage cheese (preferably low-fat)
½ cup Greek yogurt (plain)
¼ cup honey or maple syrup
2 tablespoons lemon juice (freshly squeezed)
1 tablespoon lemon zest
½ cup fresh blueberries (or frozen, thawed and drained)
Instructions
Gather all your ingredients and ensure your blueberries are washed and dried if using fresh. If using frozen blueberries, thaw them and drain any excess liquid.
In a large mixing bowl, combine the rolled oats, vanilla protein powder, almond flour, shredded coconut, and chia seeds. Stir until well mixed.
In another bowl, mix the cottage cheese, Greek yogurt, honey (or maple syrup), lemon juice, and lemon zest until smooth and creamy.
Pour the wet mixture into the dry ingredients. Stir together until everything is well combined and a thick, sticky mixture forms.
Gently fold in the blueberries, being careful not to break them apart too much.
Using your hands or a cookie scoop, form the mixture into small balls (about 1 inch in diameter). Place them on a parchment-lined baking sheet.
Refrigerate the protein bites for at least 30 minutes to help them firm up.
Once set, enjoy your Lemon Blueberry Cottage Cheese Protein Bites as a healthy snack or dessert alternative!
