4 large ripe mangoes (about 2 pounds total)
3/4 cup granulated sugar
2 tablespoons freshly squeezed lime juice
1/2 cup water
1/4 teaspoon salt
Instructions
Peel the mangoes and cut the flesh away from the pit. Chop the mango flesh into smaller chunks.
In a small saucepan, combine the sugar and water over medium heat. Stir until the sugar dissolves completely, then let it cool.
In a blender or food processor, add the chopped mango, cooled simple syrup, lime juice, and salt. Blend until smooth.
Pour the mango puree into a shallow dish or ice cream maker. If using a dish, place it in the freezer.
If using a shallow dish, freeze the mixture for about 1 hour, then stir with a fork every 30 minutes until fully frozen.
Once ready, scoop the mango sorbet into bowls or cups. Garnish with fresh mint leaves or a slice of lime.
