Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
- In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and ground cinnamon until well combined.
- In a large mixing bowl, using an electric mixer, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Mix in the mascarpone cheese until smooth. Then, add the eggs one at a time, mixing well after each addition, followed by the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Gently fold the sliced apples into the batter, ensuring they are evenly distributed.
- In a separate bowl, combine rolled oats, flour, brown sugar, and cinnamon. Pour the melted butter over the mixture and mix until crumbly.
- Pour the batter into the prepared cake pan and spread it evenly. Sprinkle the crumble topping generously over the apple batter.
- Place the cake in the preheated oven and bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Once baked, remove the cake from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
