1 cup long-grain white rice, rinsed
1 teaspoon salt
1 teaspoon cumin
½ teaspoon chili powder
2 cups low-sodium chicken or vegetable broth
1 tablespoon vegetable oil or olive oil
2 medium tomatoes, diced
½ cup onion, finely chopped
2 cloves garlic, minced
1 tablespoon lime juice
Fresh cilantro, chopped (optional)
Chopped green onions (optional)

Instructions
Rinse the rice under cold water in a fine-mesh sieve until the water runs clear.
In a large skillet or saucepan, heat the vegetable oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes, or until translucent.
Mix in the minced garlic and cook for another 30 seconds.
Add the rinsed rice to the skillet, stirring it well to coat in the oil. Cook for about 2-3 minutes, until the rice is slightly toasted.
Pour in the diced tomatoes, broth, salt, cumin, and chili powder. Stir and bring to a gentle boil.
Once boiling, reduce the heat to low, cover the skillet, and let it simmer for 18-20 minutes.
After cooking, turn off the heat and let the rice sit covered for an additional 5 minutes.
Fluff the rice with a fork, mixing in the lime juice, and adjust seasoning if necessary.
