1 cup chickpeas, mashed (or black beans)
½ cup breadcrumbs (use gluten-free if needed)
1 tsp baking powder
1 tsp cumin
1 tsp smoked paprika
½ tsp salt
¼ tsp black pepper
½ tsp garlic powder
½ tsp onion powder
1 large egg (or flax egg for vegan option)
2 tbsp olive oil
1 tbsp soy sauce (or tamari for gluten-free)
1 cup grated carrots
1 cup finely chopped bell pepper
½ cup finely chopped spinach or kale

Instructions
Prepare your ingredients: Cook your quinoa or rice according to package instructions. Rinse and drain the chickpeas if using canned, and mash them lightly.
Mix the base: In a large bowl, combine cooked quinoa, mashed chickpeas, breadcrumbs, baking powder, and spices thoroughly.
Add the vegetables: Fold in grated carrots, chopped bell pepper, and spinach or kale until well incorporated.
