8 large eggs, preferably organic
1/4 cup milk (or a non-dairy alternative)
Salt and pepper to taste
Vegetable Filling:
2 cups fresh spinach, chopped
1/2 cup diced bell pepper
1/2 cup diced onion
2 tablespoons olive oil
1 teaspoon garlic powder
Sandwich Assembly:
8 slices whole grain or sourdough bread
8 slices cheese (optional)
Avocado or hummus for spreading (optional)
Instructions
Preheat your oven to 375°F (190°C).
In a large skillet, heat the olive oil over medium heat. Add the diced onion and bell pepper, sautéing for about 5 minutes until they are tender. Add the chopped spinach and garlic powder, cooking until the spinach is wilted, about 2-3 minutes.
In a large bowl, whisk together the eggs, milk, salt, and pepper. Fold in the sautéed vegetable mixture until evenly distributed.
Pour the egg and vegetable mixture into a greased baking dish. Bake for 20-25 minutes, or until the eggs are set and the top is lightly golden.
Once baked, remove the dish from the oven and let it cool for about 10 minutes. Cut into squares that will fit your bread slices.
Take a slice of bread, add a square of the baked egg mixture, and top with cheese if desired. Spread avocado or hummus on the bread for extra flavor. Top with another slice of bread.
Wrap each sandwich tightly in plastic wrap or foil. Store in the refrigerator for up to 5 days or freeze for up to 3 months.
