For the Strawberry Layer:
2 cups fresh strawberries, hulled and sliced
2 tablespoons honey or maple syrup (adjust to taste)
1 tablespoon lemon juice, freshly squeezed
For the Cheesecake Layer:
1 cup plain Greek yogurt
1/2 cup cream cheese, softened
1/4 cup honey or maple syrup, or more for added sweetness
1 teaspoon vanilla extract, preferably pure
Pinch of salt
Instructions
Prepare the Strawberry Mixture: In a blender or food processor, combine the sliced strawberries, honey (or maple syrup), and lemon juice. Blend until smooth, leaving a few small chunks for texture if desired.
Pour into Popsicle Molds: Carefully pour the strawberry mixture into the popsicle molds, filling them about one-third of the way. Tap the molds gently on the counter to remove any air bubbles.
Freeze the Strawberry Layer: Place the molds in the freezer for about 1-2 hours, or until the strawberry layer is firm to the touch.
Prepare the Cheesecake Mixture: In a mixing bowl, combine the Greek yogurt, softened cream cheese, honey (or maple syrup), vanilla extract, and a pinch of salt. Use an electric mixer until smooth.
Add the Cheesecake Layer: Once the strawberry layer is set, remove the molds from the freezer. Carefully spoon the cheesecake mixture over the strawberry layer, filling the molds to the top.
Freeze Again: Insert the popsicle sticks and return them to the freezer. Freeze for at least 4-6 hours, or until completely solid.
Remove from Molds: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull on the sticks to remove the popsicles.
