  1. Prepare the Strawberry Mixture: In a blender or food processor, combine the sliced strawberries, honey (or maple syrup), and lemon juice. Blend until smooth, leaving a few small chunks for texture if desired.
  2. Pour into Popsicle Molds: Carefully pour the strawberry mixture into the popsicle molds, filling them about one-third of the way. Tap the molds gently on the counter to remove any air bubbles.
  3. Freeze the Strawberry Layer: Place the molds in the freezer for about 1-2 hours, or until the strawberry layer is firm to the touch.
  4. Prepare the Cheesecake Mixture: In a mixing bowl, combine the Greek yogurt, softened cream cheese, honey (or maple syrup), vanilla extract, and a pinch of salt. Use an electric mixer until smooth.
  5. Add the Cheesecake Layer: Once the strawberry layer is set, remove the molds from the freezer. Carefully spoon the cheesecake mixture over the strawberry layer, filling the molds to the top.
