1 cup Greek yogurt (plain or vanilla flavored)
2 tablespoons honey or maple syrup (optional, for sweetness)
Instructions
In a small saucepan, combine 1 cup of water and the gelatin powder. Let it sit for about 5 minutes to allow the gelatin to bloom.
After 5 minutes, heat the gelatin mixture over low heat until fully dissolved. Stir frequently to prevent sticking.
Stir in the honey or maple syrup and lemon juice until well combined. Taste the mixture and add more sweetener if desired.
Add the sliced strawberries to the gelatin mixture and gently stir to coat each slice evenly.
Pour the strawberry gelatin mixture into individual cups or a larger serving dish, leaving space for the yogurt layer. Chill in the refrigerator for about 1 hour, or until set.
While the jello is setting, prepare the yogurt layer by mixing the Greek yogurt with additional honey or maple syrup in a bowl until smooth.
Once the jello is fully set, gently spoon the yogurt mixture over the top of the strawberry jello layer.
