Instructions

  1. Start by washing the strawberries and watermelon thoroughly under cold running water. Hull the strawberries using a knife or a strawberry huller and slice them into quarters or halves, depending on their size.
  2. Cut the watermelon into quarters, remove the rind, and cube the flesh into bite-sized pieces. Place the watermelon cubes in a large mixing bowl.
  3. Thinly slice the cucumber. This adds a refreshing crunch to your salad. Add the cucumber slices to the mixing bowl with the watermelon.
  4. Gently fold the sliced strawberries into the bowl with the watermelon and cucumber to combine the fruits evenly.
  5. In a small bowl, whisk together the olive oil, balsamic vinegar, honey, salt, and pepper until well combined.
  6. Drizzle the dressing over the fruit mixture and toss gently to coat all the ingredients without bruising the strawberries.
  7. If you're using feta cheese and mint, sprinkle them over the top of the salad.
  8. For the best flavor, let the salad chill in the refrigerator for about 30 minutes before serving.
