For the Filling:
1 lb ground pork or chicken
1 cup shredded cabbage
1/2 cup shredded carrots
1/2 cup diced bell peppers
1/2 cup green onions, chopped
3 cloves garlic, minced
1 tablespoon Cajun seasoning
1 teaspoon soy sauce
1 teaspoon hot sauce
For the Egg Rolls:
12 egg roll wrappers
Vegetable oil, for frying
For Dipping Sauce:
1/2 cup sweet chili sauce
1 tablespoon soy sauce
1 teaspoon sesame oil
Instructions
In a large skillet over medium heat, cook the ground pork or chicken until browned, about 5-7 minutes. Drain any excess fat.
Add the shredded cabbage, carrots, bell peppers, green onions, and minced garlic to the skillet. Cook for an additional 3-4 minutes.
Mix in the Cajun seasoning, soy sauce, and hot sauce. Cook for another minute, then remove from heat.
Lay an egg roll wrapper on a flat surface. Spoon about 2 tablespoons of filling into the center.
Fold the bottom corner over the filling, then fold the sides in tightly and roll towards the top corner. Seal with water.
In a deep skillet or fryer, heat vegetable oil to 350°F (175°C). Fry egg rolls in batches for 3-4 minutes until golden brown.
Remove and drain on a paper towel-lined plate. Repeat until all are fried.
To make the dipping sauce, whisk together sweet chili sauce, soy sauce, and sesame oil.
