Description
Watermelon Tajín Pickle Crunch Cups are a refreshing and vibrant summer appetizer that perfectly marries sweetness, spice, and crunch.
Ingredients

4 cups of watermelon, cubed (seedless preferred)
1 cup of white vinegar
1 cup of water
1/2 cup of sugar
1 tablespoon of salt
1 teaspoon of whole black peppercorns
2 cloves of garlic, minced
1 teaspoon of red pepper flakes (adjust based on spice preference)
1 cup of tortilla chips, crushed
1 avocado, diced
1/4 cup of fresh cilantro, chopped
1 lime, juiced
1-2 tablespoons of Tajín seasoning
Instructions
In a medium saucepan, combine white vinegar, water, sugar, and salt. Heat over medium-low heat, stirring until the sugar and salt dissolve completely.
Add black peppercorns, minced garlic, and red pepper flakes to the mixture. Bring the solution to a gentle simmer, then remove it from heat.
Place the watermelon cubes in a large glass jar or bowl, then pour the hot pickling liquid over the watermelon. Allow it to cool for 30 minutes at room temperature, then cover and refrigerate for at least 2 hours, or preferably overnight.
In a mixing bowl, combine the diced avocado, chopped cilantro, and lime juice. Gently fold in the pickled watermelon cubes.
In a serving dish, layer the crushed tortilla chips at the bottom. Spoon the watermelon and avocado mixture on top.
Sprinkle Tajín seasoning generously over the top and serve immediately.
