Mini Chicken Quesadillas are the perfect solution for easy weeknight dinners. 2 cups cooked shredded chicken
1 cup shredded cheese (cheddar or Mexican blend)
1/2 cup diced bell peppers (any color)
1/4 cup chopped onions
1 tsp garlic powder
1 tsp cumin
8 small flour tortillas (6-inch)
1/2 cup sour cream
2 tbsp salsa
1 tsp lime juice
Salt and pepper to taste
Optional toppings: diced avocado, chopped cilantro, jalapeños, extra salsa, cheese
Instructions
In a mixing bowl, combine the shredded chicken, shredded cheese, diced bell peppers, chopped onions, garlic powder, and cumin. Mix until well combined.
Preheat a large skillet over medium heat.
Place a tortilla in the skillet. Layer a generous amount of the chicken mixture on half of the tortilla. Fold the other half over to create a half-moon shape.
Cook the quesadilla for about 3-4 minutes or until the bottom is golden brown and crispy. Flip it over and cook for another 3-4 minutes until the other side is golden brown and the cheese is melted.
Remove the cooked quesadilla from the skillet and repeat the process with the remaining tortillas and filling.
In a small bowl, mix together sour cream, salsa, lime juice, salt, and pepper to create the quesadilla sauce.
Cut the quesadillas into wedges and serve with the homemade quesadilla sauce and optional toppings.
