  1. In a medium bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, ground ginger, and minced garlic to prepare the marinade.
  2. Place the chopped chicken into a resealable plastic bag or a bowl. Pour the marinade over the chicken and refrigerate for at least 30 minutes or up to 4 hours.
  3. In another bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, and minced garlic to make the Bang Bang Sauce and set aside.
  4. Preheat your grill to medium-high heat (about 400°F or 200°C).
  5. Remove the chicken from the marinade and thread onto skewers, leaving space between pieces.
  6. Lightly brush the grill with vegetable oil and grill the skewers for about 10-12 minutes, turning occasionally, until cooked through.
  7. Remove the skewers from the grill and let them rest for a few minutes. Serve warm with Bang Bang sauce.
