1.5 pounds boneless, skinless chicken thighs or breasts, cut into 1-inch cubes
1 tablespoon vegetable oil
Wooden or metal skewers
½ cup mayonnaise
3 tablespoons sweet chili sauce
1 tablespoon sriracha
1 teaspoon lime juice
1 clove garlic, minced
¼ cup soy sauce
2 tablespoons honey or brown sugar
1 tablespoon rice vinegar
1 tablespoon sesame oil
1 teaspoon ground ginger
2 cloves garlic, minced
Instructions
In a medium bowl, whisk together the soy sauce, honey, rice vinegar, sesame oil, ground ginger, and minced garlic to prepare the marinade.
Place the chopped chicken into a resealable plastic bag or a bowl. Pour the marinade over the chicken and refrigerate for at least 30 minutes or up to 4 hours.
In another bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, and minced garlic to make the Bang Bang Sauce and set aside.
Preheat your grill to medium-high heat (about 400°F or 200°C).
Remove the chicken from the marinade and thread onto skewers, leaving space between pieces.
Lightly brush the grill with vegetable oil and grill the skewers for about 10-12 minutes, turning occasionally, until cooked through.
Remove the skewers from the grill and let them rest for a few minutes. Serve warm with Bang Bang sauce.
